Fourth of July Refreshing Recipes

Fruity Ice-Pops

Who doesn’t love a cool, fresh ice-pop with very few calories? Here is one of our favorites:

Ingredients:

5 oz. blueberries

5 oz. strawberries, hulled and halved

1 ⅕-2 cups of 100% white grape juice

Instructions:

Arrange some of each fruit into one of eight 3 oz. ice-pop molds (you want the fruit to be snug in the mold)

Pour enough juice into each mold to just cover the fruit

Insert ice-pop sticks and freeze until solid (approximately six hours)

Patriotic Banana Pops

Here is an easy Fourth of July recipe that even your children can make (with a little help with the microwave)

Ingredients:

4-5 firm, ripe bananas cut into 2-inch pieces

6 oz. semi-sweet chocolate chips

1 tablespoon sprinkles

Insert a toothpick into each banana piece

Instructions:

Arrange bananas , toothpick side up, on a piece of parchment-lined baking sheet and freeze until firm (approximately 2 hours)

In a medium microwave-safe bowl, heat chocolate chips in 10 second increments, stirring between each until melted smooth

Dip each banana piece in chocolate, shake of excess, and cover with sprinkles. The chocolate should set quickly, but, if needed, put pops back in freezer to harden before serving

Strawberry Lime Sorbet

Here is one that no one can resist. It will keep you feeling cool on the hottest of days.

Ingredients:

3 cups (15oz/390g) strawberries, frozen

Zest from 1 whole lime

¼ cup (70g/2 ½ oz) fat-free condensed milk

Instructions:

Combine the berries, lime zest and the condensed milk in a food processor or powerful blender and process until smooth and creamy

Transfer to a freezable container and let it firm up for about 4 hours to be able to scoop

Scoop and enjoy for up to 6 weeks
